
Even though Once Upon a Tart calls this a bruschetta, I prefer to refer to it as a “potato pizza.” Smoked Mozzarella is melted on slices of tomatoes and Red Bliss potatoes atop a copious slice of bread with fresh tomato paste. Even though the bruschetta is vegetarian, the smoky flavor of the Mozzarella makes it seem like there’s bacon or pancetta — a plus from my perspective. This is an alternative type of pizza but a viable and healthier choice for lunch or a snack.
