Brut Première Cuvée

I’ve been a fan of Bruno Paillard champagnes for many years but have never seen them served by the glass in the City. That is until a recent chance spotting at Bobo, the charming West Village restaurant with two bars. I have a penchant for the upstairs bar, which is intimate and cozy. While the weather is still nice, enjoy your glass of Paillard Première Cuvée ($18) on the terrace.

A flagship wine, the Brut Première Cuvée is a classic blend of all three champagne grapes: 45% Pinot Noir, 33% Chardonnay, and 22% Pinot Meunier. The addition of 20% to 50% of reserve wines (aged in both tanks and barrels) rounds off the wine, providing consistency and structure.
